Cilantro Tip of the Day
I love cilantro and have finally found a way to have it frequently without having to force feed large quantities to my family before it goes bad.
1) Wash and pick one bunch of cilantro.
2) Place in a 1 qt. freezer bag and freeze.
3) When frozen, bash it up into little pieces.
4) Sprinkle onto soups, casseroles, salad dressings as needed.
The bashing part is the important step. Just scoop out what you need with a spoon as a garnish for the other foods at serving time. It will thaw almost instantly so it can be used on anything that doesn't need the fresh/dry texture which is why I put it into the dressing and not straight onto the salad.
