Ghiradelli Brownie Cookies!
I am going to share a recipe with you. It came to us via the Messers from church and it is our new favorite. It was originally called Super Gooey Chocolate Drops but although they are super, gooey, and chocolatey, they look more like discs than drops. In addition, they taste exactly like the Ghiradelli brownies that we love so much. So, I have renamed the recipe as Ghiradelli Brownie Cookies and will make them whenever I need a little bit of chocolate heaven but don't want to use up my limited supply of brownie mixes.
(Drum roll please....)
Melt together in medium bowl or double boiler -
1/2 cup unsalted butter
4 oz unsweetened chocolate
4 oz semisweet chocolate
Mix in with a wooden spoon -
1 c packed brown sugar
1 and 1/2 c white sugar
1 t vanilla
Add, beat until glossy -
4 eggs
2 T buttermilk
Whisk, add to above until just mixed -
1 c flour
1/2 c cocoa powder
1 t cinnamon (good, but leave this out and it will tasted exactly like the aforementioned brownies)
1/2 t salt
Add -
11 oz (1 bag) semisweet chocolate chunks
1 c dried cherries (another optional that I never do and will make it different than the brownies I adore so much even though it might be yummy)
Drop by heaping tablespoon onto PARCHMENT paper and bake 12-15 min at 325 until set but still fudgey inside.
Bet you can't each just one!
